This is the second wine we’ve featured from Ovum in 4 months and we love their lovin’ ways…sorry. All of their wine seems to just sit perfectly with our food at the restaurant and Big Salt – their german grape blend – is nailing it with possibly our best tandoori carrot dish we’ve ever had on the menu at the moment. They’re unique and so full of character as well as being unbending in their commitment to germanic grapes. Gewurz is a top class grape for spice. This is an unfiltered and unfined production so don’t be scared of a bit of sediment. It’s magically refined and restrained. Pure, elegant with big blood orange aroma, long minerality and pure sweet canned fruit, lavender and rose. Delectable is a word that always feels a little bit too posh and arty to say out loud but typing it feels just right.

WINERY & PRODUCTION

Ksenija and John at Ovum have a world class reputation for expressing their terroir and style in the final product. The vines were planted in 1976 on serpentine, galet soil. Everything is organic and hand harvested. They use native yeast before fermentation in concrete eggs (incidentally, Stefan our head sommeliers favourite way to ferment). 9 months on the leaves and as little intervention as possible. Also note that every vintage is named after a Nina Simone song, we don’t know why, but nice fact. Every wine they make is to really showcase the terroir.
