This is the second wine we’ve featured from Ovum in 4 months and we love their lovin’ ways…sorry. All of their wine seems to just sit perfectly with our food at the restaurant and Big Salt – their german grape blend – is nailing it with possibly our best tandoori carrot dish we’ve ever had on the menu at the moment. They’re unique and so full of character as well as being unbending in their commitment to germanic grapes. Gewurz is a top class grape for spice. This is an unfiltered and unfined production so don’t be scared of a bit of sediment. It’s magically refined and restrained. Pure, elegant with big blood orange aroma, long minerality and pure sweet canned fruit, lavender and rose. Delectable is a word that always feels a little bit too posh and arty to say out loud but typing it feels just right.

In the great price hike of Burgundy, white beaujolais can a refreshingly great value for money escape. This one from Dominique Morel is a great example from the family-run winery north of Fleurie. They say that Dominique his ethos is to “make wine he likes to drink”… which I would hope most winemakers would standby but we understand what they mean. Theres lots of concentrated fruit, soft and round mouthfeel and wonderful citrus and white stone fruit aromas with just the nicest touch of flowers. Crisp and lingering, it’s great for bringing the best out of vegetable dishes like our Kashiphal or something creamy with some starch like our Bhuna Aloo. It drinks well and we like to drink it too!

Domaine Vendange, Altesse, Madame de M

The owners of Domaine Vendange started bottling their own wines in 2015 but the vineyards have been in the family for much, much longer. With 10 hectares on glacial moraines, they show huge respect for tradition and the terroir they’ve been gifted. Rich soils and perfect climate give the perfect foundations for a great wine celebrating the Savoie. Subtle brioche takes you first then complex blossom notes with some spice and flint before a textured, livepalate of pea and citrus. It’s deceptively intense but very balanced. It’s fresh too and for those unfamiliar with the name Altesse, the grape is also known as roussette but think of riesling, pinot gris notes. Pairing wise, it can be used the same. Strong aromatic dishes but things with a good garlic lead, bit of sweetness and a kick of spice will take advantage of the acidity and strong aromas of the wine.

Andeluna Blanc de Franc, Tupungato 2020

The Andeluna winery is a real statement of mountain wines. Based at the highest possible point of the Andes they could be exposing the vines to surreal moon light at night, inspiring their name. Based in a building that looks like an ancient fortress, they invest heavily to showcase the best of Argentine wine by recruiting some of the best winemakers in the continent. This rose is refreshing and intense. Spicy and herbal top notes with strong floral aromas are contrasted delicately with pepper and basil. It’s smooth and silky with bright acidity but super juicy too with a spicy finish. Such a confident new world rose that is flexible and can work with herbal, salty and spicy dishes alike. For our palate, we like to use it with our allepy or mappas keralan style dishes that accentuate the background heat but can put it up against a madras just as well.

Di Fillippo, Montefalco Sagrantino 2016

The Di Fillipo family vineyard is like taking a step back in time to a dreamy nostalgic view of an Italian wine producer where you would half expect Woody Allen to make a dainty romance film about the daughter of an old Mario looking farmer and American sommelier student who can’t speak any Italian. There’s no machinery, everything is mostly animal assisted with horses ploughing the fields and geese apparently bred to clean the vineyard and no doubt act as bouncers for any visitors (400 of them apparently…cue comic relief scene where 400 geese attack the American student and he bumps into said daughter in a haystack). We digress anyway, the wine is epic! Sagantino is a beautiful grape not seen enough and it thrives in the terroir and hot summers. This wine is rich and sumptuous. Big berry fruits come through with a touch of spice and oak and sleak tannins that last! It’s also where Saint Valentine was born… more ammunition for the screenplay we’ve now decided to write. Pairing wines, go big and chunky. Rich on rich. Working with a chunky hearty beef dish will release all the hidden chocolate and fruit notes in the sauce and the fine tannins won’t overload the hits of chilli.

Château de Belleverne Le Cru des Amoureux, AOP Saint Amour

Saint Amour is known as the most romantic of the Beaujolais Cru and we love a good gamay at the restaurant, so what better to put out for a February offering! The Bataillard family who own the vineyard are cemented in the northerly Beaujolais Crus and own plots all over the region and understand the terroir as well as anybody. The wine itself is fabulously balanced between forward fruit aromas of wild strawberries and berries, great structure and subtle backbone of liquorice and pepper. It’s smooth and silky but with a complex and lasting finish. Fantastic Beaujolais that’s lack of chunky tannins will sit wonderfully with richer indian dishes where the sauce offer a deep fruit beneath the spice while also sitting comfortably with a buttery Makhni.

The team at Alpha Box & Dice are an interesting bunch but exceptional production putting them in some of the world’s best cellars! They have a project of producing a wine for every letter of the alphabet showcasing a different style, technique or varietal with the view to have a full collection showcasing the incredible variety of Southern Australias wine scene. You can see they’ve got great ambition and a modern point of view… mostly down to the youth of head wine maker and local Sam who joined in 2016 at just 26 years old! All of their wines of innovative but exceptional and very drinkable looking. This Tempranillo riff is no exception but is deceptively subtle to begin with. It’s got figs, plums and a little bit of spice on the nose. To begin with, it’s reluctant to play but a unique blend of black olive and salted plum join the party with strong, chalky tannins leave an exciting playground in your mouth. With the strength of character for some Indian seafood courses, it’ll make a nice combo. Also anything with a round, warm, lasting heat like our kashiphal!

But the sparkling that showed no fear in taking on champagne and winning still has its place. The team at Sorelle Bronca are showcasing the rich history of the grape, style and region that goes back 100s of years to remind us that it was never just a trend to satiate the masses who couldn’t afford champagne. It’s easy drinking with a soft but lasting fizz. Light rose and red currant fruits take the floor with just the right amount of rose. Fragrant pink fizz that drinks well. The rule is that spice is always fantastic with fizz. The acidity sits well and helps the depth of flavour dance around your palate while keeping the heat in check.
