Just by looking at the label you could probably tell this is an American wine. Don’t be deceived by the big statement, it is not a super saline wine but does capture its surroundings as a reflection of the vineyard and the vintage. The winery is right on the coast of the pacific and has a great affect on the wine. It’s fresh, dry with bright and intense tropical fruit aromas mixed in with some florality. Pineapple, passion fruit, jasmine working together. It’s got a bright acidity with some salinity- but not as much as the label might suggest- with a clean finish and rounded texture. The winemakers are super passionate about taking the most natural approach and started producing in 2011 in an effort to produce the highest quality but authentically Oregan white wines they can. The Big Salt always gets a great response at the restaurant and we’ve already been sneaking a few bottles to eager guests way before we launched our Opheem Cellar. The grapes Ovum are typically passionate about – Riesling, Gewurztraminer, Muscat – are a match made in heaven with spice and with the saline note you would expect this to work perfectly with seafood led courses but we actually use this for our rich, tandoori carrot course where it comes into our own.

WINERY & PRODUCTION

Ovum wines are a great, independent, natural producer made up of wine-making husband and wife Ksenija and John. The grapes are harvested by hand from single sites in Oregan and Washington before whole bunch pressed. Soaked on skins for 5 hours in steel and oak. Wild yeast fermentation under ambient temperatures with 6 months lees contact before being bottled unfined. Committed to their ethos, they first started producing in 2011 and have made a reputation around the world for producing great examples of their favourite grapes to represent the climate of the North West of the USA.
