Our love of great greek wine continues with this single varietal wine using the indigenous grape Limniona. The Tsililis family created the estate in the mid 90’s with primary vision of reviving the iconic vineyard to its former glory before the Phylloxera outbreak halted production at the start of the 19th Century. Limniona itself is a rare grape that nearly went extinct before a group of winemakers and researchers managed to bring it back from the brink. Its fantastic for a concentrated rich red that doesn’t overpower with body or fat. In this case, it’s supple and complex with a lot of layers. We made use of this wine for our summer menu working with cotswold white chicken with dense herbal marinade. We found fruity cherry, raspberry and quince notes to begin with only to be followed by some subtle spices of clove and nutmeg. To drink, it’s silky and beautifully led by red fruits but with the body of something deeper. There’s an undercurrent of savoury herbs too that comes through. Smooth stuff too. There’s a nice complexity here that has made it quite flexible for us and best result came from complex spicier dishes that have a herbacious, vegetal backing. Saag dishes would work well for someone preferring a red. Hyderbadi Keema Mattar or a Bhuna Banjara also hit the spot.

WINERY & PRODUCTION
There’s a lot of history here for a relatively young winery. The Tsililis family rejuvenated the iconic Theopetra estate in the 90s and it sits at the foot of the Meteora Rocks with thousands of years of history. For the history buff themselves, gape seeds from the Paleolithic era have been found in this area! For everyone else, they make a belter of a wine with great terroir. The grapes of hand-picked and carefully sorted with whole bunch fermentation with selected years for up to 5 days. Then gently pressed before malalactic vonersion rounds the wine. Finally aged 90% in french oak barriques and then 10% american oak barriques before 12 months bottle aging.
