Make prosecco great again! The years of gin & prosecco dominating any bar or restaurant in the UK feel so far away now with a rush on english sparkling (which we still absolutely adore) and everyone’s own super trendy martini (which we also smash out). But the sparkling that showed no fear in taking on champagne and winning still has its place. The team at Sorelle Bronca are showcasing the rich history of the grape, style and region that goes back 100s of years to remind us that it was never just a trend to satiate the masses who couldn’t afford champagne. It’s easy drinking with a soft but lasting fizz. Light rose and red currant fruits take the floor with just the right amount of rose. Fragrant pink fizz that drinks well. The rule is that spice is always fantastic with fizz. The acidity sits well and helps the depth of flavour dance around your palate while keeping the heat in check.

WINERY & PRODUCTION

The sisters Antonella and Ersiliana respect the tradition of production as they maintain their family owned production and mostly hand pick their grapes but also have a very modern outlook with a huge focus on research. The care for their process is clear with all grapes trained by hand and planted without any herbicides. The Glera grapes are 160 metres above sea level but the pinot nero is 1000 maintaining a nice high acidity. The juice is fermented at a cool temperature in stainless steel and has two months on the lees before bottling. There is mch research into spontaneous fermentation and the winery and they experiment with intercropping of different plants too and it will be great to see what comes from these pair in the future.
